Fruit Purée and Concentrate Juice for use in the manufacture of fruit juicesnectars is the unfermented but fermentable product obtained by suitable processes e.g. by sieving, grinding, milling the edible part of the wholepeeled fruit without removing the juice. the fruit must be sound, appropriately mature,freshpreserved by physical means by treatments applied in accordance with the applicable provisions.
The idea is to be able to manufacture derivates from fruit and vegetables all year round, and not be seasonal like fresh fruit and vegetables are. This way ice cream, juices, creams, candy, etc; can be manufacture along the whole year, by using fruit puree or concentrates regardless of the fresh product season.
